Toasted S’mores Ice Cream Sandwiches Close your eyes for a moment and imagine you’re about to take a bite into something cold, sweet, and all-around delicious, these are exactly that! You can picture crispy, cinnamon packed graham crackers, with layers of vanilla ice cream mixed with a rich chocolaty fudge sauce and chewy toasted marshmallows! Each layer is like a mini campfire dessert, warm, melty, and full of flavor. The vanilla ice cream is chilled, the fudge is decadent, and the toasted marshmallows are just sweet enough to still taste like a s’more. Honestly, this is the ultimate summer treat, frozen, chocolaty, and just sweet enough to put a smile on your face Let me be real with you, they are super fun to make, and even more fun to eat. They are sweet, a little fancy-feeling, but still fully not hard to make, at all. Most important? They are sooooo summer. Seriously, what’s better than dessert that tastes like bonfire night but is cold and creamy instead? Now I want to confess something to you, I’m not typically a marshmallow person.
For me, the perfect s’more has to be constructed a certain way:
No specialty chocolate—just classic Hershey’s milk chocolate.
Extra fried marshmallows—I like mine almost blackened all over.
Super gooey chocolate—a melted chocolate bar has to ooze when you take a bite.

I’ve been wanting to create (and share) this recipe for months. Finally, the weather warmed to a point where I thought it would be perfect! And it actually is perfect for 4th of July—can you imagine these at a backyard BBQ or after fireworks?! So good.
And the best part, this is so easy! Only four simple ingredients:
Vanilla ice cream (your favorite vanilla ice cream).
Chocolate fudge sauce (homemade or store-bought—I won’t judge).
Graham crackers (store-bought or homemade—your choice).
Marshmallows (for roasting, duh).

That’s it! No complicated steps, no weird ingredients. Just deliciousness.

Step-by-Step Instructions
Step 1: Roast Those Marshmallows
First thing’s first—roast those marshmallow. The quickest way to do this? Use your oven’s broiler. Just lay them out in a single layer on a baking sheet and configure your oven rack to the second highest position.
Pro tip: DO NOT TURN AWAY! Broilers are fast and marshmallows can go from just right to burnt in a matter of seconds. So, stand there and watch them like a hawk. As soon as they are just right, pull the pans out of the oven.
Once their done, let them rest for a minute.

Step 2: Make the S’more Icecream Slab
Next, grab a pan and line it with parchment paper (it will make it so easy to remove later). Spread a nice thick layer of vanilla ice cream across the bottom of the pan.
Then drizzle some chocolate fudge sauce all over the ice cream-don’t be shy! Then place your toasted marshmallows on top of the sauce. And lastly, add another thick layer of vanilla ice cream to cover everything.
Then you can put the pan back in the freezer to let it firm up.

Step 3: (Optional) Make Homemade Graham Crackers
If you are feeling really ambitious and want to up your game even more, you can make krackers. I am all in on this recipe because it is buttery, spiced with just a hint of cinnamon and ginger, and way better than store-bought.
Here’s what I do:
Mix the butter, molasses, honey, flour, cinnamon and a pinch of ginger.
Roll out the dough, and cut into squares (about 2 by 2-inches. They do not have to be perfect).
Top with a sprinkle of cinnamon-sugar mixture before baking.
Pro Tip: If your cookies spread too much while baking- chill the cut out dough in the freezer for 10 minutes before baking. (I didn’t need to do this but just a heads up if your kitchen is warm.)
Short on time? Store-bought graham crackers work just fine!
Step 4: Assemble the Sandwiches
When your ice cream slab is frozen solid, cut into squares and sandwich each square between two graham crackers.
You can eat them right away (if you can wait!) or stack them up in the freezer to gobble later.
The cookies are crisp but slightly soft in the middle, and the cinnamon gives you that warm cozy flavor that works beautifully with the cold creamy ice cream and melty chocolate. Each bite will be a different experience of texture- crunchy, creamy, gooey- it is (possibly) too good. You’re going to want to have a batch of these in your freezer all summer long. They’d be great for a hot day, BBQ, or just when you want a little treat. They’ll be especially perfect for 4th of July and I assure you everyone will love them!
