Funny how the recipes I put the least effort into always end up being the ones I’m most obsessed with. This dip/salad/appetizer/plate-of-yum is proof.

I whipped this up at the end of the day when the sun finally peeked out. With only a little time before sunset, I wanted to make something beautiful in that golden light—and, more importantly, something delicious.

Originally, this olive oil dip didn’t have peaches. But then I spotted my perfectly ripe peaches basking in the sunlight and thought, “Ohhh, peaches would be AMAZING here.” A quick swap—tomatoes out, peaches in—and it turned out to be one of my best ideas in ages.

Everyone who tried it agreed. The sweet, juicy peaches with salty, creamy feta, all drenched in garlicky oil? Chef’s kiss.

This appetizer couldn’t be simpler—just a handful of ingredients and maybe 20 minutes (if that). It’s the perfect snack, appetizer, or light dinner for this time of year. My favorite recipe this week!

Let’s break it down:

Step 1: The Oil
Simmer extra virgin olive oil with thinly sliced garlic, fresh thyme, and chili flakes until the garlic turns golden and crispy. Right before taking it off the heat, stir in chopped pistachios and a pinch of salt.

Step 2: The Peaches & Feta
While the oil warms, arrange peach wedges on a serving plate or shallow bowl. Crumble fresh feta over the peaches. (You could stop here and dig in, but trust me—the oil takes it to the next level.)

Step 3: Add the Oil
Pour that hot garlic oil over the peaches and feta. Give it a gentle toss, then drizzle everything with honey for an extra layer of goodness. Finish with fresh basil and a sprinkle of sea salt.

Step 4: The Bread
You need bread with this. Crackers or plain toast work, but for the best experience, make buttery ciabatta cubes: Toss cubed ciabatta with cold butter and garlic, bake until the butter melts and turns golden, and the garlic gets crispy.
