Chocolate Peanut Butter Ice Cream Stuffed Dates—like a mini Snickers ice cream bar, but way healthier and made with only six ingredients. Imagine soft, chewy, caramel-like Medjool dates, split open and stuffed with creamy vanilla ice cream, rich peanut butter, and crunchy roasted peanuts. Each one gets dipped in chocolate, frozen, and finished with a sprinkle of flaky sea salt. The result? A magical treat that tastes just like a Snickers with vanilla ice cream in the center. SO GOOD!

Lately, I’ve been saying this a lot, but I’m seriously excited to share these “no-effort” ice cream bars. This date dessert is honestly unreal—it tastes shockingly similar to an ice cream Snickers.
The twist? No caramel, no marshmallow, and aside from the sugar in the ice cream, no extra sugar. I’m obsessed with these—they have the perfect flavor.
The idea came to me easily. I really, really wanted an excuse to make peanut butter-stuffed dates. They’re one of my favorite sweet-and-healthy snacks. Most of the time, I keep a batch in the freezer and enjoy them frozen with a pinch of sea salt. Peanut butter-stuffed dates are such a deliciously simple 2- or 3-ingredient treat. Sometimes, I’ll coat them in chocolate before freezing. So it’s just dates, peanut butter, and chocolate—SO GOOD!

Since no one really needs a full recipe for something this simple, I’ve never shared it. I basically just explained how to make them in one sentence!
But then… I thought, what if we add vanilla ice cream? That could turn them into something like ice cream Snickers bars. And that sounded incredible.
Once the idea hit, I didn’t hesitate—I started making them right away. And now? They might just be one of my all-time favorite creations.
How to Make Them
Step 1: Pit the dates
Slice each date lengthwise, but don’t cut all the way through. Remove the pit and toss it.
Try to use the softest, freshest Medjool dates you can find. I get mine from Rancho Meladuco Date Farm—they’re the best I’ve ever had. Seriously, they’re so sweet, soft, and chewy, they taste better than caramel candy. Plus, they’re organic and come from a family-owned business. The owners (who I’ve known for years) are the sweetest.

Step 2: Stuff with ice cream
Use your favorite vanilla ice cream—dairy-free, vegan, or classic. Even frozen yogurt works, though ice cream is probably tastiest. I love Tillamook French Vanilla or Vanilla Bean. (Here’s a breakdown I found on the differences between Tillamook’s three vanilla ice creams.)
Fill each date with a spoonful of ice cream, then freeze for about 30 minutes.

Step 3: Add peanut butter & peanuts
Take the dates out and drizzle (or spoon) over your favorite salted peanut butter. I use Whole Foods 365 Organic Creamy Peanut Butter (just peanuts and salt—no extra oils or sugars). You could swap in almond butter, cashew butter, or sunflower seed butter if needed. Top with roasted peanuts, then freeze again until solid.

Step 4: Cover in chocolate
Melt chocolate chips in a microwave-safe bowl. Dip each frozen date in the chocolate, then sprinkle with sea salt if you like. Freeze until the chocolate sets, then store them in the freezer.
If your dates are nice and soft, you can enjoy these straight from the freezer—they’ll still be chewy, creamy, sweet, and salty. Honestly, better than a Snickers!
These stuffed dates are a healthier way to enjoy a summer ice cream treat with minimal sugar. And that just makes us love this recipe even more!
