When I was little, my cousins and I spent our summers at the pool or swimming in the lake. Pool days always meant hitting the snack bar for chicken fingers, fries, milkshakes, and ice cream—basically every kid’s dream.
That pool snack bar had the best options, and we were obsessed. Sometimes, I’d switch up my usual ice cream order and go for a cookies-and-cream bar. Other times, I’d grab the strawberry shortcake one. Even though I’m a chocolate lover, there was something about that strawberry shortcake bar that just hit the spot.
Last summer, I tried recreating that strawberry shortcake ice cream bar, but by the end of the season, I still hadn’t nailed it. The recipe was way too complicated, with too many steps. I was overcomplicating it, so I finally gave up.
But then, a few weeks ago, I made these with just seven simple ingredients, and they turned out perfect—exactly the strawberry shortcake ice cream bar flavor I’d been chasing!
And they’re so easy! I’m obsessed—they’re gorgeous, fuss-free, and ridiculously tasty. I couldn’t wait to share them with you today!

The Process
These bars are seriously simple. And if you want, they can even be vegan!
The ingredients? Coconut milk (or heavy cream), good-quality (or homemade) strawberry jam, vanilla, white chocolate, coconut oil, and freeze-dried strawberries. Nothing fancy!
Just blend the coconut milk (or cream) with the strawberry jam and vanilla. (If you’re using heavy cream, don’t overmix, or you’ll end up with whipped cream.) Pour the mixture into popsicle molds and freeze. That’s it—your creamy strawberry ice cream base is done with just three ingredients!

Once the bars are frozen, it’s time for the magic shell. But instead of chocolate, we’re making a white chocolate version—just white chocolate melted with coconut oil. That’s all. When melting the chocolate, go slow so it doesn’t burn. (I usually use the microwave for this.)
After the chocolate is melted, crush the dried strawberries and mix them with the brown rice crispies. Dip each frozen bar into the magic shell, then roll it in the strawberry crumbs. Honestly, this part is so fun—perfect if you want to get the kids involved. And super easy for them, too!

Why Are These Better Than Store-Bought?
So many reasons!
First, these pops are actually creamy thanks to the canned coconut milk. Plus, they have real fruit jam—just make sure to use a good-quality one. (I’m obsessed with The Little Market jams.) And they’re way healthier!
Let’s be real—summer calls for a frozen, creamy treat. And these only take 20 minutes to make. Chances are, you already have everything in your kitchen (I usually do).
