Buffalo Chicken Dip Sliders

Easy Pull-Apart Buffalo Chicken Dip Sliders Soft dinner rolls stuffed with cheese, ranch dressing, creamy buffalo chicken, plenty of scallions, and pickled jalapeños. The rolls get brushed with a spicy garlic butter and a sprinkle of poppy seeds before baking. Seriously delicious—everyone goes crazy for these! They’re ooey-gooey inside, crispy and golden outside, with that irresistible garlic butter finish. Whip these up for game day, but trust me, double the batch—they disappear in seconds!

We’re halfway through January, which means Super Bowl Sunday is just around the corner. The hype is real, and I’m especially pumped because game-day food is my absolute favorite.

These sliders? They’ve become a total hit with my family and friends. Honestly, it’s wild that I haven’t shared the recipe sooner!

Back in the day, Super Bowl Sunday meant one thing in our house: buffalo chicken pizza and/or wings and fries from BW3s. If you’re from northeast Ohio, you know the deal.

Game nights were the best—everyone huddled by the fireplace in the family room, dinner in hand, eyes glued to the TV. Such good memories!

Now, I’d rather recreate those flavors at home instead of ordering takeout.

My go-to buffalo chicken pizza is in my Quick and Cozy cookbook, along with my favorite buffalo chicken tenders. But hey, the website needed another buffalo recipe too—so here we are!

And these sliders? Perfect. Just layer, bake, pull apart, and devour. So. Good.

Ingredients

  • Cooked, shredded chicken
  • Buffalo sauce
  • Cream cheese
  • Cilantro
  • Scallions
  • Soft dinner rolls (I use King’s Hawaiian Rolls)
  • Ranch dressing (I make mine with Greek yogurt)
  • Melty cheddar cheese
  • Melty pepper jack cheese
  • Salted butter
  • Hot sauce
  • Worcestershire sauce
  • Garlic
  • Poppy seeds

Special Tools

Just a mixing bowl, a sheet pan, and parchment paper—nothing fancy here!

Steps

Step 1: Mix the Buffalo Chicken

I use cooked chicken breasts or store-bought rotisserie chicken (just like my Nonnie did!).

Toss the shredded chicken with cream cheese, buffalo sauce, cilantro, and scallions (green onions). Sometimes I throw in extra peppers too.

Step 2: Slice the Rolls

Cut the dinner rolls in half. Wish they came pre-sliced, but I haven’t found any good ones yet!

Step 3: Layer the Ingredients

Spread half the cheese on the rolls, then drizzle with ranch dressing. The cheese layer first keeps the rolls from getting soggy.

Pile on the buffalo chicken, extra cilantro, scallions, pickled jalapeños, and the rest of the cheese.

Place the top half of the rolls back on.

Step 4: Make the Butter Sauce

Mix melted butter with hot sauce, Worcestershire sauce, and chopped garlic.

Pour or brush the sauce over the rolls, then sprinkle with poppy seeds.

Step 5: Bake and Serve

Pop them in the oven and let that cheese get all melty. The smell? Unreal.

And yes, they come out extra cheesy!

Slice and serve hot. I love adding honey jalapeños on top too.

These are best enjoyed fresh, with extra buffalo sauce and ranch for dipping. (Blue cheese dressing would also be amazing!)

No fancy tricks here—that’s what makes these sliders so darn good. Perfect for dinner or game night!
